The Bikini Cocktail

Yields 10 servings

For the Citrus Syrup (produces 750ml)

300ml newly squeezed clementine juice
200ml recently pressed lemon juice
500g caster sugar

For the Cocktail (produces 850ml, to serve 10)

400ml good quality vodka
100ml classic gin
150ml peach liqueur
200ml citrus syrup (from the recipe above)
Fresh cranberries, to garnish
Mandarin essential oil, for finishing

Method

To prepare the Cordial: Put the listed components inside a saucepan, heat until it reaches a simmer, stirring so the sugar melts. Then, turn off the burner and leave to cool down fully. Decant to a sealable bottle, seal keeping it chilled, it will last for about a month.

To make Premix: Pour all the liquid ingredients in a sizeable container, allow it to infuse for 60 minutes, then filter it preferably using muslin, so it's perfectly clear.

To serve: Add 85ml of the premix into a stirring glass filled with ice, and agitate carefully for one minute until cold. Strain into a chilled martini glass or equivalent, top with the cranberries adding the final touch using a quick spritz of the essential oil over the drink.
